It's almost lunchtime so here's a post specially for readers out there who, like me, love potato chips but have thus far abstained from indulging due to health/diet reasons. Thanks to PCC who shared this.

#20 Baked Eggplant Chips Cut the eggplant into slices, sprinkle with salt and let sit for an hour or so until the water drains out. Drizzle with olive oil, salt, pepper, and other seasonings before baking.
